Unfortunately, most of the good food during my trip to Arizona was eaten with my coworkers, meaning I was not about to embarrass myself in front of them by taking pictures of my food. However, I can share with you my breakfasts throughout the trip since I was eating solo in the mornings.
I actually had pretty poor planning for this trip and didn’t pack any food of my own at all! When I arrived at the Seattle airport on Sunday, I picked up a multi-grain bagel with two bananas. Half of the bagel and one of the bananas was consumed in the terminal for breakfast while the other half of the bagel and the second banana turned into my lunch.
My one complaint about the resort I was staying at would be that they had slim pickings for food options before 7 a.m. in the morning. Since none of their restaurants were open at 6:30 a.m. Monday morning, I hit up their coffee stand in the gift shop and walked away with quite a bit.
Talk about a sugar heavy breakfast! On the menu was a delicious low-fat blueberry muffin, a too-sweet strawberry yogurt parfait topped with sweetened granola (which was amazing!), a banana, V8 Splash Tropical Blend juice (the 2nd ingredient listed was high fructose corn syrup!!!!! NOT COOL!), and a Starbucks’ iced coffee. This turned out to be too much sugar for even me to handle in one meal and I ended up eating only having half of the muffin, yogurt, and juice. Unfortunately, I didn’t have any other food options Tuesday morning, so I had the exact same breakfast for a second day in a row (minus the juice).
Thankfully, my breakfast dining experience was able to be redeemed on Wednesday. I was flying back to Seattle late in the morning, giving me plenty of time to hit up the hotel’s restaurant for breakfast. The restaurant sits inside the lobby and has an outdoor seating area that overlooks part of the golf course!
I originally thought I would just do the normal breakfast buffet, but after perusing their menu, I couldn’t resist ordering off of it. First up was the smoothie of the day – strawberry and orange!
For the main dish, I ordered the Farmer’s Market Frittata which was described as being made with three egg whites, fresh veggies, and topped with herbs and goat cheese.
Hands down, this was the best breakfast that I’ve enjoyed at a hotel! I had to try to restrain myself from moaning throughout my meal to avoid embarrassment. Clearly, the poor frittata didn’t stand a chance against me!
Since I was dining on the corporate credit card, I thought I would splurge a little and also ordered a side of hash browns to go along with my eggs.
This was such an amazing breakfast and completely made up for the past few lack-luster breakfasts I had had. It was also the perfect meal to end my trip with.

I have a love/hate relationship with hotel breakfasts, they’re either great or bad and I always sigh on the first day that I’m in for a week of the same thing over and over. You managed to find things that sound fabulous so often
